To me, there is really nothing special about a cupcake. I think they're overrated. Does that make me a bad person? Maybe. But I'm okay with that. However, I can't deny that a cupcake is the perfect vehicle for this icing, which is fluffy af and sweet as can be.
I paired the icing with a strawberry cupcake that I made with homemade strawberry jam. That was essentially the only sugar I added to sweeten the cake, as I didn't want it to be too sweet.
Long story short, this icing is only 5 ingredients, took about 10 min to make, and rocked my world. I also think this would be absolutely killer on a carrot cake (just sayin').
And, if anyone should care to know I graduate in 3 weeks- Holy shit. Any post-school advice would be greatly appreciated in the comments below. Also, please listen to in the blood by john mayer if you haven't already. pure magic.
1 cup unsalted butter (room temp)
1 1/4 cup powdered sugar (sifted)
1 teaspoon vanilla extract
1 1/2 tablespoons whole milk
1/4 cup marshmallow fluff
1) Place butter in a stand mixer with the paddle attachment and beat for 5 min until it has turned light and fluffy.
2) Add in half of the powdered sugar, and beat for another 2- 3 min until well combined. Once combined scrap down sides to make sure everything is well incorporated and repeat with the remaining powdered sugar.
3) Add in the vanilla extract. Next, add the milk if needed to loosen up the icing. Mix to combine.
4) Add in marshmallow fluff and combine until well blended and enjoy!
