Hello friends! I know I've been absent on here for a bit, so I do apologize. Real life really kicked my butt there for a minute, but I'm back! Also, if life happens to hand to a plane ticket to Kauai, don't buy a returning flight. You're welcome. But more on that later!
This here has to be the easiest mid-week recipe out there! Sometimes this is where I have some of the most fun in the kitchen; throwing together a meal with ingredients I already have on hand.
I guess what I'm saying is, let this be a guideline. You don't have to always follow a recipe with exact measurements. Have fun when you're making food! Be creative. If you don't like chili flakes, sub a different herb that you love. Catchin' my vibe? Make it your own.
I happen to love chili flake and lime, so this only seemed appropriate. I had this for lunch and it was delightful. The sautéed veggies with a hint of garlic and then a zesty, tart marinade for the chicken right on top was perfect. Added bonus: this took 15 min from start to finish.

In a bowl create your marinate. Add olive oil, red wine vinegar, a squeeze of lime juice + zest and salt & pepper. Score raw chicken in a criss cross pattern and soak in marinate for 10 min.
Add olive oil and garlic to a pan over medium heat. Remove garlic once it has infused its flavor into the oil. About 5 min. Add vegetables and sauté until slightly soft.
Add chicken to the pan. Leave in pan until cooked through. Plate vegetables on bottom and top with cooked chicken cut at an angle. Enjoy!
